No Bake Healthy Chocolate Brownies
These brownies are easy to make and make great gifts (wrapped in a cellophane bag with ribbon). I served them yesterday as the main feature of a desert platter for Christmas dinner.
- 2 cups toasted sunflower seeds (any variety of nuts or seeds will work)
- 2 cups raisins
- 2 cups shredded coconut
- 1/2 cup cocoa powder
- Optional: 1-4 drops good quality essential oil. For my Christmas brownies, I used 2 drops peppermint, 2 drops sweet orange essential oils
- Optional: Toppings such as goji berries, flaked coconut, pumpkin seeds etc.
Add all ingredients to a food processor or high powered blender or Thermomix. Puree until ingredients are well combined, in a cookie-dough consistency. Press into a cake tin to desired brownie thickness.
Store in refrigerator until serving. Cut into slices as large or small as you desire.
To make a brownie desert platter
Arrange brownie slices onto a platter, with plenty of room in between pieces. Surround with seasonal cut fruit and mint leaves.
